This is a family tradition started by my Grandmother. Every year at Christmas she would make dozens of these for the family Christmas get together. She has now passed and the receipe lives on through her children and grandchildren. It's a fairly simple recipe and our family raves about them. I would describe them as a light crisy on the outside, soft on the inside, sweet treat.
Ingredients12 servings
Butterhorn Pastry
- ½ lbButter, Room Temp for best mixing
- 1 lbCottage Cheese, 2 cups whole milk (4%) small curd
- ½ tspSalt
- 2 cupAll-Purpose Flour
Frosting PreMix
- 4½ tbspSugar
- 2 tbspWater
Frosting Base
- 4½ cupPowdered Sugar
- 1Eggs
- ⅔ cupButter
- 1 tspVanilla Extract
Instructions
Butterhorn Pastry
uses
½ lb Butter1 lb Cottage Cheese½ tsp Salt2 cup All-Purpose FlourMix ingredients by hand (gloves recommended) or using a large mixer (e.g. Kitchen Aid) until dough forms and is mixed well.
Place down plastic wrap on counter. Place dough on plastic wrap. With wrap form dough into a ball and close wrap around it. Refrigerate overnight.
Next day, Preheat oven to 375 degrees.
Remove dough from wrap and cut into equal thirds. I like to use a metric scale to get the amounts equal.
Roll each third out on pastry board in round circle and cut into 12 pie like slices using a pizza cutter. Should be rolled out to the thickness of pie crust so you will have a circle of about 12-13 inches.
Roll up each triangle - large end to small
Bake on greased cookie sheet for 30 minutes or until starting to brown. This will give them a crispy bottom. Baking sheets can be used, but the bottoms won't be as crispy.
** If you want to bake two pans at once, just change pans from lower rack to middle and vice versa after 15 minutes
Frosting PreMix
uses
4½ tbsp Sugar2 tbsp WaterIn a Pyrex measuring cup, combine sugar and water and bring to a boil. (I use the microwave to do this, couple minutes).
Remove from heat and let cool.
Frosting Base
uses
4½ cup Powdered Sugar1 Eggs⅔ cup Butter1 tsp Vanilla ExtractCombine ingredients listed + Frosting PreMix in a bowl and beat for 2-3 minutes.
Once butterhorms are cooled down, use the frosting generously.
This frosting freezes well and can be used on cookies, etc. I have kept it in our freezer until the next year and it is still good.
